Recipe | Thai Sweet Chili Chicken

I decided to try a Thai Sweet Chili Chicken this week. It ended up coming out AMAZING! I can’t wait to make it more.

Here’s the ingredients you will need to make this recipe:

Ingredients

2 skinless, boneless chicken breasts
Olive Oil
6 tablespoons bottled Thai Sweet Chili Sauce
Pinch of salt
Sesame Seeds                                                                                                                                         2 cloves garlic, minced
Cilantro Leaves, Chopped

First you’ll want to fill a frying pan about 2 inches with vegetable oil, and turn it on medium heat. While that’s heating up you can make the batter and cut up the chicken into small cubes.

Batter

1 egg white
1/2 cup all purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/2 cup cold water
1 tablespoon olive oil
Pinch of salt

Then you’ll want to dip the chicken into a plain bowl of flour, and then into the batter. The flour will help the batter stick more.

After you dip each piece into the batter, and make sure it’s as much covered as you can get it… put each piece into the frying pan and cook until golden brown. I suggest taking out a larger piece and cutting into it to make sure it’s cooked all the way through.

Once they’re cooked, take them off and put them onto a plate with a paper towel to absorb the grease. Wash off the pan and then add your garlic in. Once the garlic starts to turn brown, you’ll want to add your chicken in. Then add in 6 tablespoons of your sauce and toss it.

After it’s done, you’re ready to put it on the plate and garnish it with some cilantro and sesame seeds! I put mine over brown rice and it was so good and filling!

This is a great meal for two people. And very easy and quick to cook! The only thing that takes long to cook is the rice so I suggest starting that earlier in a rice cooker.
